Celebrate National Dessert Month With a Flight

Cloud Gate ("the bean"), Chicago, IllinoisA flight of sweet taste, that is. October is National Dessert Month, so the Albert, 228 East Ontario Street, Chicago, Illinois, will offer a tasting menu after 5 p.m. from Sunday (October 14, 2018) through October 20, 2018.

Curated by the Albert’s Executive Pastry Chef Vanarin Kuch (a former contestant on Top Chef Just Desserts and the Food Network’s Chopped, as well as a nominee for Best Pastry Chef by Food & Wine Magazine) the four-plate special pays homage to outer space and the Windy City.

Priced at $36, the flight includes:
* The Bean, a dark chocolate mousse, layered with hazelnut feuilletine and flourless cake, colored silver to replicate the iconic sculpture (pictured, above) in Millennium Park.
* General Relativity, a coconut parfait, with a coco jam center, honey tuiles fabric, and a pumpkin cremeaux. Colored in a white chocolate spray with honey tuiles piped into a woven pattern to mimic space-time fabric, and laid on top the mousse to show the curvature of space-time fabric “bending” around the object.
* Earth, a demi-sphere filled to mimic layers of the earth (core, mantle, crusts) with a spicy cassis core, blackberry jam, goat cheese mousse, and rye pretzel tuiles glazed in a white chocolate to resemble Earth.
* Hyperion, a horchata ‘cloud,’ replicating Saturn’s only non-elliptical moon. This square shaped cloud is light and airy, filled with toasted sesame cream and served with avocado crumbles.
